How can I hide the sim lag indicator (aka sim-bar) at the top of the HUD?

Click the LULU Logo on your HUD , and choose "other" > "sim performance". You can turn the bar on or off.

In case you're wonderng, the bar is designed to be sim-friendly, only refreshing once a minute when it detects lag.
